Ethnic Supper Club visits Korea

Cora and James ate first, some safe options of fruit and PB&J.
Offerings included (top) spicy pork bulgogi (thinly sliced marinated meat), tofu and veggies (eggplant, red bell pepper, and mushrooms), korean pancakes made with split peas and lentils instead of mung beans, with fresh carrots, chiles, and scallions. DELICIOUS!
Probably my favorite and most simple was this Korean rice bowl, made with brown jasmine rice, thinly sliced chicken, asparagus and egg. Light, but filling.
The kitten I am fostering this week made an appearance after dinner, James was very sweet with it, and Cora thought it was super cool, until it chased her, and she screamed and ran away.
Never a dull evening with ethnic foods and Team Lindsay! Thanks Jay and Denise, for continuing to experiment with new countries. Next up in July will be France or Switzerland. Butter and/or cheese. Sign me up, but don't tell my trainer.
